Kilometre and mile splits are recovered from the workout's segment events, each with its own statistics.

Values as HealthKit stored them sit next to values recomputed from the samples, so you always know which one you are reading.
The file explains itself: a plain-language summary, a step table, units for every field and a guide to each section. Feed it to a spreadsheet, a script or a language model.
Workout Export reads Health data on your iPhone and writes a file. Nothing is uploaded, there is no account, and the app has no analytics. The only copy of an export that leaves the phone is the one you choose to share. The full policy is on the privacy page.
Browsing your workouts is free. Exporting needs Workout Export Pro, an auto-renewing subscription at $9.99 per year (local pricing may vary), billed through the App Store. Cancel any time in your Apple Account settings.
